So I am trying out a new recipe that I wanted to share with you guys! It’s called a cucumber avocado caprese salad and I got it off of pinterest! (Check out my Pinterest page here) I alter the recipe a bit because I don’t like avocados so I didn’t add them. But this is still a great recipe with or without them.
So now on to the recipe! I started with 2 large seeded cucumber, one pint of cheery or grape tomatoes, fresh basil, balsamic vinegar, EVOO, One cup (8 oz) of fresh mozzarella cheese, 1 teaspoon(tbs) of garlic power and salt and paper!
So I cut up the cucumber and basil first. I actually had a little basil plant I got from the grocery store so it was very fresh! I just picked a hand grab of leaves from the top of the basil plant. I washed off the cucumbers and with a very sharp slicing knife I cut them its 1/2 inch thick and then cut each slice into four pieces. I then added both the basil and cucumber into a large container.
For the tomatoes I cut 1 pint (30-33) of cherry tomatoes. You can cut them anyway you like. I cut mine into quarters. Now for the mozzarella you use 1 cup(8oz) of diced mozzarella. There really is no way to tell you how to cut it. It really depends on how big or small you want the pieces.
Add the mozzarella and tomatoes to the bowl, add 1 tablespoons (Tbsp) of EVOO, 2 Tbsp of Balsamic Vinegar and 1 teaspoon of garlic power. Add salt and pepper to taste and ENJOY! I’m trying a lot of new and healthier recipes. I will make sure to share it with you guys! Here’s a picture of the finished product! Also if you want to add avocados the recipe calls for 2 avocados! 🙂
